Arugula Is The New Spaghetti

This might be my new favorite lunch. I made a meat sauce a few nights ago for dinner (see the “I make-a tha meat sauce” recipe), and was looking through the fridge today for a quick lunch. The leftover sauce sat in tupperware looking amazingly delicious all in my face, but I didn’t want pasta. So I heated up the sauce and put it on top of arugula instead. I also sprinkled a little parmesan cheese on top. Then I devoured it in 5 minutes.

Please try this immediately and tell everyone you know: arugula is the new spaghetti. C’mon, tell me you’re not drooling over this delicious, healthy lunch creation.

Note: My original meat sauce recipe calls for ground beef and broccoli. This time I used ground turkey and no broc. Still delicious. Especially better the second day.

    The title of this post cracked me up.

    You’re totally on to something. You could even wilt the argula with some onions & mushrooms.

    This reminds me of my Salad with Everything Slim-Down Strategy. I take a portion of regular dinner and throw it on top of a large salad. Still a lot of food so I don’t feel deprived, but way less calories… Which leaves room for wine.
